Silvaner is the representative grape variety of the Franken region. Hermann-Josef Bender has great confidence in this award-winning Silvaner produced by the Steinmann Winery, for which he provided advice on matters ranging from the method of cultivation to the wine-making process. Silvaner often has an earthy heaviness to it, but this wine is quite different. Frankolino’s delicate and elusive aromas were captured by means of a precisely regulated, low-temperature fermentation. The result is a modern, international flavor with exotic notes.

Frankolino is only available from Hermann-Josef Bender and from the Steinmann Winery itself. Hermann-Josef recommends this wine as an excellent complement to sushi and other Japanese food, and offers it to us here at Frankenwein Depot at a special price. This is an opportunity not to be missed.

The base wine for this 2012 Perlwein is a cuvée made from the mild-flavored Bacchus grape, the vibrant but similarly mild Domina, and the dry and spicy Portugieser. The sparkle comes from the natural carbon dioxide produced during fermentation. This produces a natural yeasty aroma and a long-lasting, smooth effervescence quite different from that of artificially injected carbon dioxide. The dosage which determines the final flavor is dry, as is to be expected of a Hermann-Josef Bender wine. The finished product has a soft pink tint, but the flavor is crisp.

This Domina was commissioned by Hermann-Josef Bender, and aged for 18 months in oak barrels (barrique) made in the traditional Franken way (a process which itself takes three years). Instead of using modern shortcuts such as the addition of oak chips to add flavor to the wine, aging in the barrel for 18 months (rather than the usual 12) has produced a wine in which you can taste the vanilla flavors inherent in the oak of the barrel itself. The long maturation also brings out a unique taste, which is stabilized by the oak barrique.
